Shelf-life research on fresh cut potatoes; sensory evaluation

We are carrying out a shelf-life stipulation on chilled, fresh cut potatoes. An important part of this shelf-life research, is a sensory evaluation of the end product: French fries. Using the results of the shelf-life research, we have made several recommendations to this client on how to further optimise the product quality of the fresh chips and how to extend the shelf life.
