This month we are working on the validation of a processing line for nuts. As it is inconceivable that we should validate an existing process using activated salmonella cells, we are using modified lactic acid bacteria. We are following internationally recognised standards in the validation of this line. During the validation of this processing line we demonstrated a log6 reduction in salmonella. This means that this processing line meets the strictest conditions for killing of salmonella.
