This month we are working on the pascalisation of ambient stable products. The HPP process is mostly used to extend the shelf life of chilled products. The discipline of making products suitable, following pascalisation, for storage without refrigeration is still fairly new. We have developed special challenge tests for this type of product. The validation of the shelf life of these products went well: the products are now on the market.
