Predictive modelling of spoilage organisms is an excellent method for predicting food shelf life. This also applies vice versa: if we can establish the exact time a certain micro-organism started growing, we can use the formula and process to calculate the preservative capacity of the product at that moment. Using these data we can go back in time and pinpoint exactly where something went wrong in the process. We refer to this as predictive modelling in reverse and have been able to help various clients in identifying the cause of quality complaints.
