In order to validate preservative-free recipes, we are currently working on an all-in-one challenge test for preservative-free products. For this test, we select a combination of spoilage-causing bacteria that are relevant to preservative-free products. We make a distinction between preservative-free drinks and fruit juices, preservative-free dressings and preservative-free pasteurised sauces. These tests are expected to be available to clients during 2015.
