We are working on chilled, preservative-free dressings with a shelf life of 6-12 months from production for several clients. In the case of some of these products we process fresh herbs, fresh garlic and fresh onions. We use our calculation models to make an estimation of the shelf life in advance. We use an all-in-one challenge test, dedicated for this type of product, to provide evidence of the ultimate shelf life.
