This month, we are carrying out a process validation for salmonella on a processing line for nuts and seeds. In order to carry out this test, we are using non-pathogenic surrogate bacteria that we import from the USA, especially for this type of test. These surrogate bacteria have exactly the same heat resistance as salmonella strains. This test enables us to ascertain the critical parameters of this processing line, and to show that - in the right process conditions - there will be a log6 to log7 reduction in salmonella.
