Important modification to temperature profile export for shelf-life studies on Listeria monocytogenes

In February 2019 a modification to the guideline for the implementation of challenge tests for Listeria monocytogenes was approved by the European working group laboratories. In the modified version the temperature profile export for Listeria studies has been changed from 8-12-12°C to 7-7-12°C.

The modification in the guideline is based on research carried out at around 10,000 retailers in Europe. This shows that 95% of the European retailers studied store their products at a temperature of < 7°C.
