We are currently working on a challenge test for preservative-free pasteurised products. For this test we select several relevant bacteria that can grow in pasteurised products, such as ready-made saté sauce, ready-made bechamel sauce and tomato ketchup. Following an extensive series of validation tests, a cocktail of spoilage-causing bacteria is put together that we use to test pasteurised products with less acid, less salt and preservative-free products. This test is expected to be available to clients after summer 2015.
